Mission Statement
At Elemental Coffee Lab, we honor the legacy of Chris Galloway, whose passion for science and discovery inspired us to create a coffee experience grounded in curiosity and craftsmanship. Rooted in the elements, we combine the precision of chemistry with the art of roasting to produce exceptional coffee. Our mission is to celebrate both the science and soul of coffee and the connections it creates in every cup.

Our History
Elemental Coffee Lab is owned and operated by Casey Galloway, a trained chef and entrepreneur. Casey purchased the roasting company, formerly known as Cobblestone Coffee Roasters, from John and Melissa Nesbit in November of 2024. While in the process of purchasing the Coffee Lab, Casey's husband and business partner, Chris passed away suddenly. Chris was very passionate about coffee and was lovingly known in his family as the “coffee connoisseur." Chris was also a scientist with degrees in biology and chemistry, working in hospital labs across New York. To honor his memory, Casey rebranded Cobblestone Coffee Roasters as Elemental Coffee Lab, blending Chris's love for science and coffee. In addition to Elemental Coffee Lab, Casey owns Café 19 in Seneca Falls, NY, a local favorite since its opening in 2013. Renowned for its quality, consistency, and craftsmanship, Café 19 has earned a dedicated following among locals and tourists. Casey’s success at Café 19 has paved the way for her expansion into coffee roasting, and her commitment to excellence remains at the heart of both businesses. Casey and Chris’s exceptionally talented daughter, Rylee, is preparing to attend college to study business. With a bright future ahead, Rylee looks forward to supporting her mother in running both ventures, continuing the legacy her parents began together.

Meet Xavier Millerd, Elemental Coffee Lab's head roaster
For as long as they can remember, Xavier has been captivated by the world of coffee. What started as a morning ritual quickly became a lifelong passion, leading them to explore every aspect of the bean-to-cup journey. From researching single-origin beans to perfecting their brewing methods.
Now, Xavier has taken their love for coffee to the next level as a professional roaster. With a deep appreciation for the science and artistry behind roasting, they approach each batch with precision and care. Their goal is to highlight the unique flavor profiles of every bean, ensuring that each roast tells its own story.
Xavier has worked for Casey for six years taking on many different rolls at Cafe 19. Casey knew Xavier's passion for coffee would make them the perfect fit as head roaster.
When Xavier isn’t behind the roaster, you can find them hanging out with friends and playing with their 2 cats Honeybee and Sapphire.
